Description and Requirements

A basic knowledge of nutrition is necessary to the health of every human being. This microcredential would be useful for anyone to provide a foundational knowledge of evidence-based nutrition. Additionally, many jobs require some nutrition knowledge without providing coursework in nutrition, or perhaps only one course. For example, medical and nursing schools typically require only one course in nutrition even though nutrition is integral to health and healthcare. Therefore, the audience for this microcredential would span from the general public all the way to pre-medical students and existing healthcare providers. It would provide workforce development specifically for early childhood workers, school foodservice, long-term care, personal trainers, coaches, high school health/culinary teachers, and many more. The courses offered in this microcredential constitute a body of work by providing foundational nutrition knowledge for the general healthy population at every life stage, an introduction to dietary analysis, and acknowledging the impact of culture on food choices.

Yes. NUTR 240 and NUTR 216 are offered every term. NUTR 225 is offered three terms per year. NUTR 241 and NUTR 325 are offered twice per year and can be offered more with an increase in demand.

Strategic Plan

This microcredential supports the goal “A university that fuels a thriving world” by expanding the availability of evidence-based nutrition knowledge to community and industry partners, current students. It also supports action 5 to “significantly increase online enrollment” as offering nutrition online will help OSU capture market share in this space.
